Chef Shares Recipe for At-Home Bastille Day Cooking

Today is Bastille Day, the French national day that marks the beginning of the French Revolution. A significant French holiday similar to our Independence Day, it's makes for the perfect opportunity to appreciate French culture through its cuisine.

Baguettes, crepes, cheese, crème brulee, pates: the list goes on and on, for the list of foods we can thank the French for perfecting.

If you're looking for a French dish to cook up as your own way of celebrating Bastille Day, Chef Todd Lough from the Pelican Grand Beach Resort shared a recipe for Rouille, a traditional accompaniment for bouillabaisse, a French seafood stew. The rouille should be spread onto a baguette slice and dunked into the soup.

Rouille ingredients:
One potato
One tablespoon fresh chopped garlic
One egg yolk
Two tablespoons fresh squeezed lemon juice
Pinch of saffron threads
Sea salt and fresh cracked pepper to taste
Quarter cup extra virgin olive oil

Step One: Begin by placing the potato in a saucepan with cold water. Bring to a simmer and cook completely.

Step Two: Place the potato in a dry terry cloth and spin the skin off. Immediately place in a food processor and add the garlic, egg yolk, lemon juice, salt and pepper, and saffron. Puree it.

Step Three: Slowly incorporate the oil olive while the food processor is running. Then, adjust the seasoning with salt and pepper and serve alongside a hot bowl of bouillabaisse.
