The juice bar is officially here, South Florida. It's slowly becoming a trend, shops popping up here and there with their own line of fresh-squeezed or hydraulically pressed fruit and vegetable juices.

These days, almost everyone is aware of the cleansing and healing properties fresh fruit and vegetable juices have over our bodies. When you drink the juice from whole foods, you are drinking concentrated nutrition. But did you know the method of extracting the juice and the type of produce you use -- just plain old responsible juicing -- are important factors when it comes to getting a cup of green liquid or a healthy, nutrient-dense drink?

To respond to the growing fad, juice bars have set up shop, proudly proclaiming the use of high-tech juicers that extract juice under high pressure, activating and "protecting" all those vital nutrients and enzymes. 10. The Vegan Cafe
A small, aging strip mall in West Palm Beach -- located amid a plethora of fast-food establishments -- may be the last place you'd expect to find a vegan lunch spot. But just a few miles west of I-95 off Okeechobee Boulevard, that's exactly what you'll find with the Vegan Cafe. Owner Moe Senechal has filled his small shop with a wide array of health-focused fare, from fresh juice to fermented foods. Since opening in July, already a few local vegan-loving "celebrities" have stopped in to check out the small café, including Hippocrates Health Institute codirectors Anna Marie and Brian Clement. Several large tables allow for the lunch crowd to eat in and enjoy a chalkboard menu of cold-pressed juices, smoothies, and a serve-yourself soup bar that changes daily. There's also a short menu of raw, vegan eats. And for the fully committed vegan, an entire wall is dedicated to shelves showcasing colorful jars of Senechal's own homemade, probiotic-infused fermented foods. The menu of juices is scrawled across the chalkboard menu, fun names like "garden of greens," "pink panther," and "sunrise." You can also order a 16-ounce smoothie for just $6.99 with funky flavors like apple berry pie, go go yogi, and chocolate thin mint.

Check out Zen Bar for a cold-pressed organic juice or a refreshing smoothie. It has shots of wheatgrass and E3 "Brain On" blue algae, which helps you focus.
