The diminutive kitchen space will remain as is, cranking out terrific sandwiches on perfect Peruvian rolls: soft interior with a harvest of holes and a firm, crunchy crust.
The photo above is today's sandwich with roast turkey, the sweetness of red onions, herb mayo, and a little heat from the rocoto peppers. I was jealous I had not ordered the chicharron, with crispy pork and fried sweet potato. Next time.
