Tundra on Las Olas had its soft opening last Sunday, the ice-themed restaurant conceived by David Berman and Alex Podolny. The centerpiece of dining is a 15-course tasting menu for $59, which includes kobe beef meatballs, ceviche, potato black crusted grouper, and butter poached lobster. And yes, that is an ice sculpture, one of many unveiled in the course of service. More photos after the jump.
Dinner service begins at 6 p.m., with ample seating outdoors at 1017 East Las Olas. The restaurant is the first of three ice-themed restaurants planned by the owners, who will open a fine dining restaurant called Chill in Miami in January. They're also seeking out space for a family-friendly concept.
The double sided bar riffs on ice, but the real thing is in the glass.
The open kitchen allows diners a front row to see the action as the kitchen plates dishes with dry ice garnishes.
While some restaurants are doing away with white tablecloths, the restaurateurs decided a dressed up dining room and the ice-theme warrants them here.
One of a few ice sculptures in the dining room before service, they're also available at tables upon request. And no, it's not cold in the dining room: no jackets required.
Berman learned to carve ice sculpture at hotels, says the former executive chef at Broward County Convention Center. His hobby became a passion, which led to his opening Sculptured Ice Creations, the Deerfield Beach-based ice-design company, which will supply the restaurant with its ice and sculptures.
