No. 31: St. Louis-Cut Ribs From East Coast BBQ

And now, a brief manifesto on barbecue ribs: Ribs are under attack, my friends. They've been dissected and reconstituted as fast food sandwiches; plopped in braising pans
and par-boiled until they're formless mush, the palid bones they cling to the only indicator that they were once proud meaty products. To add insult to injury, the perpetrators of this ribby injustice deign to take that sadly destroyed meat and further taint it with sickly sweet sauces and celebrity endorsed spice blends from dudes who wear sunglasses on the back of their necks. On the back of their necks, people! Well I, for one, won't take it, friends. I want real barbecue ribs -- the kind that are cooked low and slow for several hours over real wood smoke, just like Baby Jesus intended. After all that heat and time, something magical happens. The skin grows snappish and lightly charred; the meat underneath tender and moist while maintaining some real bite. And the sauce? Fuck your sauce! These puppies are all about juice. Rendered fat never tasted so fine. Yep, I want real ribs, like the kind produced at East Coast BBQ in Pompano Beach. Anything less would be... well, not ribs.

Yes, these ribs are worthy of this list. And they are a much needed 'down to earth' item that this list should represent. Your average person does not eat escargot, tuna tartar, or Morton's steaks on a regular basis. Fagottini al Tartufo Bianco e Nero? I don't think so......
