In practice, he may well be their equal, as sauces in their almost infinite variety are the glory of classic French cuisine. The sauce of Indus's chicken tikka masala, a curry rooted in traditional Indian cookery but said to have been adapted to Western palates by British or Scottish cooks, is certainly the glory of this West Palm Beach Indian restaurant. Unconscionably thick and creamy, colored a brick-ish red with tomatoes and goosed with a riotous array of spices, it comes on as suave as Bond, James Bond, while setting off a subtle fire in your mouth, the kind of thing that would have your average haute and haughty saucier chewing on his toque. Which, doused with a couple ladlefuls of this sauce, would make a mighty fine meal.
