No. 99: Sauteed Gator Tail From Rosey Baby

Rosey Baby is one of South Florida's great hidden gems, an honest-to-goodness authentic Cajun restaurant planted on the far western edge of Broward County. Beer, boil crawdads, and plenty of N'awlins spice are all staples at the Babe. But an oft-overlooked dish that's worth equal acclaim is its tender, sauteed gator tail. Served in a sizzling hot iron skillet, Rosey Baby's gator has bite. It comes roaring from the kitchen, hissing and popping with steam and fury. When it arrives at your table, you get the full picture: The sweet, caramelized onions and peppers. A whole mess of dirty rice and red beans. And then there's the tender morsels of gator tail, heavily spiced little jewels of meat. Some might say, "Gator?! Doesn't that just taste like chicken?" Well, if you mean that it's a delicate white meat with little fat and a mild flavor, then yes. But in this skillet, the gator's anything but mild. It's meaty, angry, and spicy as hell. Just order another beer and get to work.
