Mark Militello Resurfaces Again in Deerfield at Cabo Blue

Chef Mark Militello, most recently of Trina in the Atlantic Hotel in Fort Lauderdale, is steering an upscale "authentic" Mexican (his descript) in Deerfield Beach.

He'll open Cabo Blue: a Grill and Tequila Bar within the next few weeks. It's on the property of the new Wyndham Deerfield Beach Resort, though it's run independently.

"They decided to change the concept," is the reason he gives for leaving Trina less than a year after arriving from The Office in Delray Beach.

He declined to elaborate, but said Cabo Blue offers him a good opportunity to experiment with a few things, such as possibly a street-food cart.

The menu will not be Americanized Mexican, he says. "No burritos. There will be tons of tacos." A taco cart that will serve those outdoors walking to and from the pier next door is a concept he'd like to employ.

Militello, who once owned several restaurants bearing his first name, is looking at opening a Mark's in Delray Beach in the near future. "I want to get this one (Cabo Blue) on track first."

Cabo Blue is expected to open in February at the Wyndham Deerfield Beach Resort, 2096 N.E. Second Ave., Deerfield Beach; phone and web site have not yet been set.

I travel the world eating and experiencing great food and wine as a living. The experience of eating at his Mark's Place in N. Miami Beach is still with me after having left S.Florida many years ago. I live in San Francisco now and recently moved and found a Miami Herald dated Sunday, August 21, 1988 containing an article with one of my favorite Militello recipes...the Roasted Chinook Salmon.This article reminds me not only of great food at his restaurant but of innumerable great experiences with friends at his restaurant...with him often coming to talk with all of us and share in the evening conversation. I can't wait to email this great "find" to all my friends. Mark is one of the great chefs and the fact that his food..or the mention of a past favorite has stayed with us over 20 years....not only mine but of a circle of friends... is a testament to this great chef and restauranteur!!!!

like i have said many times before, Chef Militello is the most talented and innovative Chef south florida has seen, his ground breaking north miami restaurant, then las olas, were thee best restaurants around, worked for him many years, and our Cinco de Mayo specials were the best, so his knlowledge of this cusiene is fantastic, cannot wait to eat here.
