Christopher's Kitchen Debuts in Palm Beach Gardens

Don't look now but northern Palm Beach County is becoming Raw Foods-Vegan Central.

First came Darbster, then The Raw Kitchen, both in West Palm. Now, a little further north in Palm Beach Gardens is Christopher's Kitchen (4783 PGA Blvd., 561-318-6193), a raw foods-vegan eatery from former Santa Monica chef Christopher Slawson.

Since moving to South Florida eight months ago, Slawson amassed such a large clientele as a private chef that he went looking to open his own restaurant, taking over the former Pizza Fusion and giving it a sleek, airy, modern look, complete with open kitchen, juice and smoothie bar, and outdoor seating around a burbling fountain.

Slawson's food, says general manager Danielle DiBerardino, is not of the beans and gruel variety, but rather more upscale with as much emphasis on presentation as in a "regular" restaurant. On the menu are dishes like Thai Wraps with mango, carrot, red cabbage, mint, basil and cilantro with a sweet almond dipping sauce and curry falafel bowl with sweet pea shoots, lemon-tahini dressing and spicy red pepper sauce.

The restaurant also sells its own line of prepared food products, from granola and kale chips to candied walnuts and onion bread.

Christopher's Kitchen is open daily for lunch and dinner, though some changes in Sunday hours may be in the works. No beer or wine yet, but they're coming too.
