No. 73: Grilled Squid From Sushi Bon
Although Sushi Bon has become a place of pilgrimage for sushi freaks in search of fresh local sashimi, Chef Ebi Hara excels at cooked dishes as well: particularly a plate of char-grilled, sliced squid that's a textural triumph. Squid can be a difficult creature to tame, but here the char gives the sweet, al dente flesh a hint of dusky bitterness; a dab of lemony mayonnaise turns the mouthful silky and tart. And underneath it all, you can still taste the sea, a fresh, mineral reminder of where it all came from.
