No. 88: Goat Cheese Cheesecake from Satoro

The goat cheese and baklava cheesecake at Satoro in Hollywood works on a number of levels: The creamy, perfectly textured custard; the savory, earthy tang of fresh goat cheese; the flaky waves of baklava doused in honey and ground nuts laced with cinnamon. The final addition: three small mounds of apricot "chutney," a brunoise of crunchy fruit made etheral with a fine chiffonade of fresh mint. As a whole, the crisp baklava, the milky custard, the tart fruit, are like a well-fleshed-out refrain. For a Mediterranean-inspired restaurant to serve this dish is to distill everything you know about cheesecake into its most primal element, then subtly reinvent so that it maintains the best qualities of the original while offering something entirely new.
