• Dear Ms. Shepherd: I LOVE vegetarian Cuisine. I also eat meat. On my organic farm in Columbia County Florida some years back, we ate two hogs a year as our meat supply. I raised them with care, went to seven hog slaughters, to make certain I could slaughter them without pain, and salted down over a hundred pounds of mullet a year. The mullet I bought fresh from the Indians in Suwanee County. The point is this: We exist in a world that is breeding itself away from the dinner table! It has nothing to do with being vegetarian or not, it is about simple protein. Eat meat or vegetarian fare, and while people do not like to see where the protein comes from, they will eat before they starve. Did you know that plants feel pain just like animals? Read Marcel Vogel. India is a very old country. There are people there who are in families that have not even tasted animal protein for may generations. They also are big on reincarnation. Who wants to eat Aunt Agatha returned? Might I suggest that a little effort in presenting the wonderful TASTE of vegetarian dishes will go a lot further than wasteful attempts at making people feel guilty about killing animals for food? Or... Look to thy geese and become a Jain. That group wear a gauze mask in front of the mouth to prevent the killing of even a flying insect. You are a good writer, and your approach to food is laudable and readable. But can the approach to vegetarian cuisine remain there and avoid the slippery slope of reproach? It sort of ruins a taste for what people are eating. The Andrew Zimmeren diet of bugs and such isn't what many consider "Good Eats," but he likes his bug haute, or should I say, "ugh cuisine?" I will drive down to Phyllis' Shake Shack, now better known as Alabama Jacks just for the conch fritters on Card Sound. On a good day, they are really that good. Though if people look at a conch as a big snail, that can put a hold on many an appetite. I think their secret is a cardamom flavored doughnut batter, but they won't tell and that is part off the mystery. It's not a Boca Burger, but I've never found a good vegetarian sub for a conch fritter. But how can anyone know unless they have tasted the real thing? Burton Dale
